Quarter Beef Ordering Guide 

• You can select the Front Quarter or the Rear Quarter.  The Front Quarter has the Shoulder and Rib section, while the Rear Quarter has the Leg and T-bone section.  
• The Front Quarter is typically larger by about 5 percent by weight.  
• The weight that you are charged for is called “Hanging Weight” which is the weight before cutting or removing bones or excess fat. After processing your 1/4 cow will weigh between 25 to 35% lighter than its original hanging weight.  (You can request your waste to be delivered.) 
• You can use the attached chart to help decide if you would like the Front or Rear Quarter.  
• In addition, you have the option of requesting soup bones.  
• All products will be vacuum packed for freshness (freezer ready) 
• A ¼ beef should fit into a 5 cubic foot chest freezer.  
• The price per pound includes the cutting, wrapping and delivery all at the same fee. 
• $9.49/lb for Front Quarter (Shoulder & Rib) 
• $9.99/lb for Back Quarter ( T-bone & Leg)
